Black/Red Teas "Hong Cha"
Fresh Hong Cha, bamboo shoots with shan yao (herb), stewed pork, camera

Black tea, such as what most Westerners' drink, is usually referred to as Red Tea "Hong Cha" in China. All tea is green on the shrub. These teas are picked, then steamed to accerate the aging/oxidation process, and dried to preserve the product. Black teas are generally sweeter tasting, and less caffeinated than Green teas.

1. “Yi Xing Hong Cha” Yi Xing Red Tea (Jiangsu Province)
This historical city is most famous for its clay tea pots. This incredible tea is rarely found outside of its’ home town. I fell in love with it during our first tea expedition in 2002, and it remains to be my favorite Hong Cha. It is made from Bi Luo Chun leaf, hand picked as a single emerging bud tip, or 1 very small leaf and 1 emerging bud tip, then steamed until 85-90 % oxidized. This crystal clear, bright red colored, thirst quenching beverage has a very delicate, sweet, cream-like taste. Yields 4 or more infusions. Special Reserve Grade –Rare, processed in very small quantities in the Spring. Velvety smooth, soft taste, due to slightly lighter oxidation of only very tiny size buds with a small whole leaf. Really excellent.
