White teas are some of the rarest teas in China. They are named white tea solely because of "the color of the beverage" made from the leaf, no matter how strong the tea is brewed (It is not at all related to the color of the dry leaf, or to the color of the fur/hair (pekoe) on the tea leaf). It is only sun dried, making it one of the least processed teas.
1. "Anji Bai Cha" (Zhejiang Province)
This is the most common of all true white teas. A pale light green, slender, smooth leaf with no hair. It yields a very pale, nearly clear, slightly grayish colored beverage. Taste is also very delicate, light, soft on the palate. Very thirst quenching, great Summer time tea.
